Four favorites come together in this dish: butternut squash, polenta, spinach and, of course, cheese. I also love eating out of bowls, the really rounded kind that fit in your hands just right. This is great, tasty comfort food.
I expected to love this dish from eatingwell.com and wanted leftovers, so I doubled it for three of us. I didn’t double the gnocchi because of the carbs, and I added protein in the form of four Spinach & Asiago Chicken Sausages from Sam’s Club.
OK, I’ll be straight with you. These don’t taste like french fries. And they aren’t quite as crisp, though the cornmeal coating helps. But they are good, especially with ketchup or another sauce (barbecue and Wow Wee come to mind).
I decided about 10 years ago that Joe and I needed to try Brussels sprouts because they are healthful. We weren’t entirely sure we would like them, based on vicious rumors that they are bitter and strong. But I found a recipe that used frozen petite sprouts, half-and-half, garlic and nutmeg. (What was that about healthful?) We were sold. Now I make it with fat-free or reduced-fat “half-and-half.”
