I had a stack of recipes copied from library cookbooks or gleaned from other sources that I needed to file. As I sorted them, this one stuck out as one I needed to try soon. It’s hard to resist something called a dinner pie (OK, any kind of pie).
It had been on my mind for years to make a Spanish tortilla, which is nothing like the tortillas familiar to most Americans. It’s basically a frittata that features potatoes.
Four favorites come together in this dish: butternut squash, polenta, spinach and, of course, cheese. I also love eating out of bowls, the really rounded kind that fit in your hands just right. This is great, tasty comfort food.
